The olive tree was one of the most sacred symbols of Athens. 

According to mythology, Athena competed with Poseidon to be the patron deity of the city offering the Athenians one gift each. 

Athena planted an olive-tree that provided the people with food, oil and wood. Her gift was accepted as more useful and Athena became the patron of the city.
